I found this recipe while surfing about the benefits of mushroom. Gave it a try and it was delicious! My daughter loves it too!

Calories: 311 calories per serving
Ingredients:
2 tablespoons extra-virgin olive oil
3 cloves garlic, minced
2 ounces shiitake mushrooms, stemmed and sliced (1 1/2 cups)
2 teaspoons freshly grated lemon zest
2 tablespoons lemon juice, juice
1/4 teaspoon salt, or to taste
Freshly ground pepper, to taste
8 ounces whole-wheat spaghetti/ fettuccine /angel hair )
1/2 cup freshly grated Parmesan cheese, (1 ounce)
1/2 cup chopped fresh basil, divided
Preparation:
Bring a large pot of lightly salted water to a boil for cooking pasta.
Heat oil in large nonstick skillet over low heat.
Add garlic and cook, stirring, until fragrant but not browned, about 1 minute.
Add mushrooms and increase heat to medium-high; cook, stirring occasionally, until tender and lightly browned, 4 to 5 minutes.
Stir in lemon zest, lemon juice, salt and pepper. Remove from the heat.
Meanwhile, cook pasta, stirring occasionally, until just tender, 9 to 11 minutes or according to package directions. Drain, reserving 1/2 cup cooking liquid.
Add the pasta, the reserved cooking liquid, Parmesan and 1/4 cup basil to the mushrooms in the skillet; toss to coat well. Serve immediately, garnished with remaining basil.
Note: I used fresh shiitake. If using dry ones, soak them up for 5-10 minutes before chopping them up.

I may not be a chef, but I love to eat and I know my food. Since I'm trying to shed off a few inches here an there, I'm more aware of my daily calorie intake. However, food is life's simple pleasure so I'm not TOO strict about it because I'm fussy when it comes to taste. I just make sure I choose better ingredients or options that's FIGURE-FRIENDLY. Cayenne Lemon Chicken
This recipe is for those who enjoys tangy-spicy food! Easy and a great menu for entertaining too!
4 servings
Approximately 110 Calories per fillet (85.0g)
Marinate for 15 minutes or more:
4 Skinless/Boneless Chicken Breast Fillet
3 cloves of garlic minced / 2 teaspoon of garlic powder
2 teaspoon of cayenne pepper
1 lemon - juice
Dashes of Olive oil to coat
Pinch of salt for flavor
Method:
Heat griller/pan and grill chicken 3-5 minutes each side.(it depends on the thickness)
Sides Suggestion:
Green salad, Beans salad or sliced and wrap in tortilla bread.
